Jicama Slaw
serves 4
Ingredients
- 1 ea canned chipotle pepper in adobo sauce
- 1/4 C lime juice
- 1/2 t salt
- 1/3 C snipped fresh cilantro
- 1/4 C sour cream
- 2 T mayonnaise
- 2 C shredded peeled jicama
Instructions
- Combine the chipotle, lime juice, and 1/2 t salt in a blender and process until smooth. Transfer to a bowl and stir in the cilantro, sour cream, and mayonnaise.
- Add the jicama and toss to combine.
- Plate and serve chilled.
